Mushroom Conserva

Straight from the Michelin-starred kitchen to your home, Chef Stuart Brioza of State Bird Provisions shares his process for preparing mushroom conserva, a technique that preserves an ingredient’s flavor and integrity.

Zero Acre’s neutral-tasting oil preserves the delicate flavors of the mushrooms for an extended length of time and can be served hot or cold.

Mushroom Conserva

Ingredients

  • 1 lb mixed mushrooms (maitake, shiitake, hon shimeji, chanterelle)

  • 1 cup sliced shallot

  • 2 cloves thinly sliced garlic

  • Peelings of 1 lemon

  • 2 sprigs rosemary

  • 3 sprigs thyme

  • 1 pint Zero Acre oil (Pro tip: Since ZAO doesn’t solidify when chilled, store in the fridge or freezer)

  • 1 tbsp sea salt

  • Several cracks of black pepper

Instructions 

  1. Combine everything in a sauce pot, slowly bring to a simmer until everything is tender

  2. Allow to cool at room temperature 

  3. Pack & store in refrigerator for up to 7 days
